Each journal will feature a different recipe which you can bake yourself!!
Today we are sticking with the cookie theme and having: Double Chocolate Coconut Cake
This simple, moist chocolate cake with coconut will be a chocolate lover’s delight!
Ingredients:
1 cup butter or margarine
2/3 cup chocolate-flavored syrup
1 (7-ounce) milk chocolate bar, broken into pieces
2 1/4 cups all-purpose flour
1 cup granulated sugar
1 cup flaked coconut
1 cup milk
4 large eggs
1 tablespoon lemon juice
1 tablespoon vanilla extract
1/2 teaspoon baking soda
Powdered sugar, if desired
Instructions:
Heat oven to 325°F.
Place butter, chocolate syrup and chocolate bar pieces in heavy 2-quart saucepan. Cook over low heat, stirring occasionally, until melted (4 to 5 minutes).
Beat melted chocolate mixture and all remaining ingredients except powdered sugar in large mixer bowl at medium speed, scraping bowl often, until well mixed (2 to 3 minutes).
Pour batter into greased 12-cup Bundt® or 10-inch angel food cake (tube) pan.
Bake for 70 to 80 minutes or until wooden pick inserted in center comes out clean. Cool upright in pan 15 minutes. Invert cake onto cooling rack; cool completely. Sprinkle with powdered sugar, if desired.
Makes 12 servings.
